One of my main motivations for creating a blog about weight loss was to find a support system that could not only empathize with what I was going through, but that could share wonderful ideas and recipes with me! I am so delighted to have met some of the wonderful bloggers I have listed in my blog list and look forward to meeting more! I am truly inspired by their stories and delighted by some of the yummy and nutritious recipes and food ideas they share. So, I thought I would give back and post some of the delicious and healthy meals I have made, as well as some of the pictures I have taken of healthier food I have chosen to eat!
My latest trip to the grocery store!!!
An average lunch for me . . . only about 400 calories!
Grilled Salmon and Black Bean and Corn Salad
Grilled Salmon again with Southwest Salad and Cheese and Garlic Biscuits!
Grilled chicken breast and veggies like eggplant, zucchini, red bell pepper, and onion!!
*Oh by the way this was not one serving, this was made for two people, and then the left over chicken was turned into a chicken and white sauce pasta with whole grain penne noodles!!!
I don't actually keep recipes, but if anyone is curious about how any of this was made or whatever just let me know I am more than happy to share!!!!
